In the bad old days of the culture wars, when the "Forces of Darkness" had aligned against the "Forces of Goodness and Light," Chicago was a key battleground and an early, crucial loss for the good guys. Foie gras had been declared illegal and the ensuing ripples of fear spread cross country. Gutless, craven punks everywhere deserted their comrades like Vichy shopkeepers while animal "activists" terrorized chefs' families and children, vandalized businesses, and strong-armed retailers. But even though chefs like Wolfgang Puck -- for instance -- suddenly discovered their preference for fluffy cute ducks over their fellow chefs or their traditions and headed for the lifeboats, a few lone heroes stood tall, proudly extending a stiff middle finger at the advancing horde.
Doug Sohn, owner/proprietor of Chicago's magnificent emporium of all things meat in tube-form (basically a lunchtime freakin' Hot Dog joint) was just such a hero. After Chicago alderman Joe Moore slipped his own proverbial weiner into the body politic, ramming through legislation forbidding the sale of foie in the city, Sohn created an homage of sorts, the "Joe Moore" dog, a duck, foie gras and Sauternes sausage topped with truffled foie gras and Dijon mustard sauce, selling it in flagrant, open defiance of the law. It was the opening shot of what turned out to be a winning strategy: making the anti-foie gras forces look just so utterly ridiculous that the law was eventually overturned and balance returned to the universe.

I'm ambivelent about a lot of places, but I am unrestrained in my love for Chicago. Only Chicago could convince me that the New York hot dog was not, in fact, anywhere near the apex of the hot dog arts.(The Chicago Red Hot deserves that honor) . Two respectably old school baseball teams, great, great bars, a tradition of unapproachably good and important music, its own, truly imposing style of architecture, an attitude both big city wise-ass and heartland lack of bullshit, a city open to the bestand most excessive/creative of new, experimental cooking styles, loaded with great chefs (many of whom are pals), it's simply another place I'll use any excuse to visit. Tonight's episode was just such an excuse.
And did I mention all the fantastic looking films shot in Chicago? (See Michael Mann's "Thief", Haskell Wexler's "Medium Cool" et al). I suspect I'll be hearing the "But what about...?" and the "How could you feature Chicago and not go to...." complaints from enthusiastic locals. I already received one e-mail, incredulous that I didn't go to Pizzeria Uno (!!). To which I replied, "What show have YOU been watching? Clearly, not mine." I guess the best thing I could say is that this show is about a slice or two of MY Chicago. Not yours. And speaking of slices? Sorry, but generally speaking, your pizza blows. The generic "deep dish" stuff? At worst, it's "tomato/cheese pie"--or maybe "egg-less tomato quiche"--or "pizza for people who just aren't fat enough". But pizza? Deep dish is pizza like Olive Garden is Italian.
But I ate something truly delicious on camera at Burt's. I don't know that I'd call it "pizza". Whatever Burt's selling? It's something.... special. Some kind of crusty, tomatoey, cheesy....casserole or something--with delightfully fresh toppings. The crust is what really sets it apart from the rest. And Burt, of course, is exactly the sort of rugged, go-your own way individual I like to see succeed anywhere. If you're planning a visit to Chicago, go buy whatever that stuff is he's making. It's great.
On NO RESERVATIONS, we try and NOT do a lot of high end, expensive restaurants. Exceptions--generally speaking--are when they're just too damn good or unique to ignore. Doing a Napa Valley show, for instance, and NOT visiting the French Laundry would be ignoring the elephant in the room (and one of the best restaurants in the world). Likewise, L20's Laurent Gras is a chef of terrifying talent. Every minute of the last couple of years that he's been without a base of operations, his fellow chefs have been holding their breath, waiting for him to land somewhere. Let's put it this way: When Eric Ripert heard we were going to shoot at Laurent's new restaurant in Chicago, he immediately volunteered himself as third wheel at dinner. Flew out and stayed over on his own dime. So when you see the scene at L20 and ask yourself the quite reasonable question, "What the hell is Eric Ripert doing on a Chicago show?" the answer is "eating really, really well." And it's not just another fancy meal. It's something really special.
I've long been a huge fan of Paul Kahan's restaurants, Blackbird and Avec. We visited neither on the show, instead dragooning Paul and his whole posse of talented chefs into whipping up a backyard barbeque. We'd been in danger of being a little light on the "pork factor" on this show. Paul set us right.
I do regret all the places I love in Chicago that we didn't get to feature on the show. As much as I like the Rainbow Club, Pippin's, Matchbox, Green Mill, I don't know how interesting it would be watching me just drinking (again) on television. The cost of allowing any recognizable music on the show precludes most live preformances or even ambient jukeboxes. I like and support Ric Tramonto (another hero of the Foie Gras battles) and enjoy his restaurants but he's not on the show either. Missed the famous "Italian Beef" but we've been on something of a beef sandwich jag lately--in Baltimore and Buffalo and that might have been a beef too far.
In our defense, we have introduced the Southside delicacy, the "Mother In Law Sandwich" to the world--something even most Chicagoans I know were completely unaware of. It is a truly magnificent mutation of which the city can be truly proud. Screw Pizzeria Uno. All Hail Fat Johnnie's!
Can't wait to see the show tonight! Deep dish pizza does blow but there are lots of places with incredible thin crust pizza in Chicago. Also, a unique place with unique "pizza", among other things, in Lincoln Park that I'm sorry you missed. The Chicago Pizza & Oven Grinder.

Im a 24 year old student living back and forth between Chicago and Dallas. My father owns a small Tavern in Illinois and my mother and her new husband build restaurants in Dallas. Torn between two focal points, I continue my pursuits in music while working and going to school.Anthony Bourdain has proven to be a great show that is fun to turn to. His words are poetic and bring these foreign lands to life. In a way it makes up for the many places Ive never ben yet keeps the viewer intriged to one day visit these far away places. Upon my recent purchase of the collection 3, these episodes have encouraged me to start cooking for myself(i'll start tonight)and seek out quality food everywhere I go. In a way they also kindle the "adventurer" flame within.Bravo

Aw, Tony, don't worry about the emails you get from griping viewers. Reading their comments on Facebook, and I'm convinced that they're a) not familiar with your show and think it should be more like a Rachel Ray travel show; or b) a bunch of jealous complainers who think they can do your show better than you. These people haven't clued into how personal these trips are for you, and how the show is about your point of view of a place. That's why we could never have "No Reservations, with Bobby Flay".

My girlfriend and I have been waiting for you and your crew to do a Chicago show since season 1. I'm from a far western suburb (DeKalb) and have been extolling the virtues of the great city to her for 2 years now. We got to visit over Thanksgiving and she is now smitten with the town also. We cannot wait to see your take on this great city, and I'm glad you're unashamed of your love for the place.

Man I'm so sick of New Yorkers disliking Chicago pizza for no other reason than it's not New York pizza. I think it's very revealing that Chicagoans love NY pizza but New Yorkers hate ours. Maybe it's because most of the country's only exposure to our pizza is in some second rate Pizzeria Uno chain (and yes Pizzeria Uno does suck in all of its forms). But the competition is just stupid. Let's love the pizza in all of its beautiful incarnations. Can't we all just get along?
Tony, My kids love watching food shows, but after viewing your show, they wont be watching yours. Why do you have to cuss on public TV, or cuss at all for that matter? I mean....what is the point? Here are a few quotes for you to think about.

What has happened to the show? The edginess is gone, the food is boring and some took the thorn out of Tony's paw that made him what we loved. Samantha Brown is now more adventurous. Someone buy the man a real drink, have him grab his smokes and hit the road the way he used to. This has become a boring piece of footage instead of one of my most loved shows.

Well, Hot Doug's is the greatest place ever. Doug, unfortunately, is very very shy. I hope one day he overcomes his painful shyness, especially when a camera is running. I work right by Burt's Place, and haven't been back for a few years, but the pizza is outstanding there.

I bet you missed out on Doug's best kept secret: the veggie dog Chicago-style. You can't beat Hot Doug's for food, fun and frolic. Glad you enjoyed him and the food. Hot Doug's is a Chicago gem.

Did everyone simply gloss over the fact that ANTHONY BOURDAIN just said that Chicago Hot Dogs are better than NYC? Yeah, I know WE know that, but nice to see someone else say it. Tony, you went to some great spots. I was worried you might miss some of the better ones, but you hit the high notes on pizza and hot dogs. Thanks for doing the city a little justice, at least as much as 40 minutes will allow. The obvious answer is another Chicago trip for season 6.

People always get all nasty when you avoid "institutions".
I must admit that I enjoy Uno or Due at their original locations, but their franchises are GARBAGE and maybe those are the places that give Chicago pizza a bad name.
However, I will not get angry because you decided to feature something different...God forbid go somewhere where the other shows don't go! How dare you go someplace where even a lot of locals have not been, Mr. Bourdain?
There are so many places in Chicago and any other great city - you can't hit them all.
I don't think people really "GET" your show or the title "No Reservations". As Eric Cartman would say "I do what I want!".
A lot of blogs and online buzz are complaining that you had Mancow on this show. My god people, do you have to like everything Bourdain does? What about enjoying the facets of the show that are different from your normal opinions? You don't have to like Ted Nugent to appreciate that there are different things in this world, and there will always be different opinions, etc.
Just like people are complaining about you not smoking and being more "kinder and gentler", etc. Can't someone change his life a little bit and change the show a little too. The guy is father now and maybe the outlook on life has changed a little bit because of that. You can't relate? Or maybe he just felt like doing something else?
Tony can't be interested in arranging flowers in Japan? Why not? Why does everyone only appreciate shock value?
The day when he starts creating "table scapes" then I will probably change my mind.
Holy freakin' hell, I MUST HAVE ONE OF THOSE THREE LITTLE PIG SANDWICHES!!! I am absolutely drooling after that segment, and as soon as I post this, I'll be checking airfares to Chicago.
I'm a Chicago resident, and one of the best things about this city is the fact that there's always something new to see, eat, experience, etc. I've lived here for going on a decade, am 30 years old, and am fascinated by the places that you've eaten in my city that I haven't. I'll be making a reservation at Moto within a month, no doubt, and I'm not a fancy-food person at all. While I disagree with your perspective on Chicago Style Pizza (it's a STYLE of pizza, but the need for utensils does make it suspect), I love your show and your honest opinion.
You've also shown an understanding of the city that I think few people can state as succinctly as you did on your show. Chicago is the Second City, but I don't think that makes it any less a destination spot or "valid" city than New York. The competition for the greatest city in the country ended after the World's Fair in 1893. Not that Chicago took the prize, but it established itself in it's own right.
Anyway, great show, thanks for the new dining suggestions.
Damn... I read this early today, and it made me go out for some dogs at lunch. Not Chicago, but down here in Central Illinois. Our local guy has 'em shipped from there. Chicago style, with a side of fries. Great stuff!
Uno's is better than McDonald's. And when you're stuck in Porter Square waiting for a late train, those are your two choices, unless you actually like/can afford yuppie bars. So, yeah, I have a certain fondness for Uno's. No, it's not Great Cuisine. But as chains go, it's fairly decent, and sometimes it really beats the alternatives. (Have you ever tried to find good food near a mall?) Besides, they actually do fairly decent apple crisp and hot chocolate- screw the "pizza". Same with Olive Garden- I know of one place where it is far and away the best choice. And yes, I do know that is very sad. But if you have to choose between OG/Uno's, McDonald's, and Denny's, which would you choose?
Of course, I'd still rather go to someplace real, but you do what you have to. And I'm feeling cantankerous because I had to miss tonight's show- the TV in the dorm lounge is being occupied by some game or other.
Tony, I thought you did a wonderful job with my city. I was shocked when i learned over the summer that you would be eating Mother-In-Laws and glad to see you stayed true and didnt visit Gino's east or any of the other garbage deep dish and the places like Portillo's where we would see Rachel taking nibs of a beef that isnt even in the city's top 50.
FYI- Real Chicagoan's prefer Tavern style cracker thin and crispy with real Italian Sausage. You not doing a segment on Johnnie's or at least o landmark beef joint was almost as inexcusable as when you missed the Jerked Pork in Jamaica.
If you ever do make it back to the city Ill take you for a combo at Johnnie's and so many other places including the best Mexican food in the country.

Doug omitted a vital ingredient to your Chicago Hot Dog,Tony, the "Sport Pepper". Sport peppers are key. When you ask for a hot dog with everything, it must be on there. I don't know why Doug insists on not putting them on.

Not surprised you'd love Chicago, but (and I'm sure there will be much sturm und drang on this) why on earth would you meet up with La Douche Extroardinaire, Mancow. Is he even on radio in Chicago anymore? That guy is from St. Louis. Is there some sort of cross promotion that the corporate bigwigs forced you into?

It's about time you came to Chicago! I would actually be surprised if you went to UNO or Portillo's. Even though they're Chicago chains, it's not Bourdain's style. A true fan would know that.
It was a sweet touch to a bittersweet man who actually enjoyed our pizza. Yes, it is no New York, but Hot Doug's makes up plenty for that. I'll give up the deep dish for a duck fatted sliver of starch, inches away from a heart attack, any day. It's well worth it.
I really hope you come back to Chicago and see the different culture that we have here. It's more than hot dogs and bar-b-ques. It's the people. The melting pot that makes this city amazing. Yes, we have our fair share of right wing jackasses that like to outlaw such wonderful foods like foie gras, and then we have the rebellions that trump the racism with something just as great as sex, their food.
I would say that there is every ethnicity here for you to try. Next time, go to them. Jamaican, ETHIOPIAN, LEBANESE, Jordanian/Palestinian, Italian (compare to New York, I'll challenge you), Korean (our Korean BBQ is fantastic here), Chinese, Iranian, Mexican (and I'm not talking burritos the size of your head), German, Polish, and much more.
I can truly compare Chicago food to sex. It's attractive and smells great when you first catch a glimpse and a whiff, it's as great as that first kiss once you put it in your mouth, it feels good when it goes down, once you get full...it's as great as the orgasm, and you need a cigarette when you're done!
We all have a little Bourdain in all of us, folks.

Well, thanks Tony for making me truly homesick. Louisa, you did a great job of representing us. My only complaint is that you didn't go a little more ethnic or soul food. Albany Park is practically the United Nations of Food.
What you did show was how much Chicago loves food, not in an obesity way but an honest love for creativity and simple good ingredients. I was even fine with the whole Mancow scene because you could see the pride in the waiter/owner's faces talking about the 3 Pigs sandwich. I don't care what anyone else says, I am digging this new "community" angle you've got going on. I really haven't found that in San Francisco yet.
Also, hearing you say how much you love Chicago makes up for any shortcomings that may have been in the episode or any one you make in the future. Thank you, again. Now, I have to cry because we don't even have passable pizza here.

I was lucky enough to be sitting beside Tony during his filming at Hot Doug's and I have to say that he and his crew are the nicest fracking film folks I've ever met. And I think it just speaks volumes about Chicago that there are so many wonderful places that deserved a spot on the show but for which there wasn't enough room. And with the help of people like Tony, Chicago just may get over its Second City Syndrome. When it comes to food, I'm not sure we're second.
I'm heartened that no one has even mentioned Charlie Trotter. That place is over.
I have to say, from a local Chicagoan, I Never expected the show to be as great as it was. I usually expect the good stuff in Asia, but It was truly one of your best...and I've been watching since the other channel's days....I dare not say....Your excitement definitely showed in this episode, which makes me really proud! Thanks for showing off our city with such excitement! To your whole crew...Keep rocking with such great original material!! And by the way, I loved the subtle "Thief" inspired filming of the city.
I live in Chicago and just loved the show. I never knew about the place on the southside that smokes there own seafood. My Brother and father are coming out to visit in a few days from Vermont and i now plan on hitting that place up along with Hot Dougs, on friday though, i want the duck fat fries.
I myself am glad you stayed away from the stereotypical food spots and did your own thing, it showed alot about your personality and what you do, you hunt out the mom and pop places, the "shot in the dark" place that shows the true underground if you will of Chicago.

Currently, the agony that many ducks suffer through is beyond description.
All I ask is that ducks be treated kindly and well, fed nutritious delicious food, allowed to live a good life, and then killed quickly and painlessly for their foie gras.

You know I really enjoy hanging around with you and the crew in these pages on my screen. I Love Chicago too. The hot dogs are good there. When I was there I got to look through Ed Ruscha's books at the art institute which was awesome. But the highlight was meeting my Dad's cousin Bill and his family for the first time. I've never felt more at home than I did in the lamplight of their lounge room staying up late talking, Bill sharing his great scotch, taking us out for ribs, and Nancy even made grits! Although I'm still not certain how or what they are or why anyone would eat them. Cornbread on the other hand I fully appreciate, especially with cheese, chilli and cumin.

Wow-just finished watching the Chicago episode and I have to say that I was really proud to see my families legacy appearing right off the bat!! Fat Johnnies is also known for its great hot dogs, hope you had a chance to try one of those too!! I found it great that you went to all the little guys, been to quite a few myself, I just hope I don't become known for my great stoner food-not that its a bad thing!! Last night I witnessed the 21st century version of the Heidi Bowl when, with 10 minutes left in your wonderful visit to Chi-town, the Travel Network dumped your show for "paid programming." Bummer. Can someone tell me how it ended? Or better yet, Tony can you slap the programmer at the network who enjoys cosmetic sales over tubular meat?
I have totally fallen in love with Tony. I just "found" his show a few weeks ago, and am having a grand time watching the old and waiting for the new. I live in D.C. and his show about our city was right on the money. I'm in LUV! (yeah, I know he's married.)
Glad you had fun here on the Third Coast! The Boy and I have moved a lot over the course of the last couple of decades and we've always lived in biggish cities (we need to be by a good airport). Coming to Chicago is the smartest move we've ever made. There's something interesting everywhere you go. What's not to love about a city that mentions its alleys as something to explore?
Thought it was a great episode and I was very pleased with everywhere they decided to visit and those they passed on as well. However, what the hell did we have to give Mancow air time for? Of all the stars, athletes and rockers who call Chicago home, they had to subject us to that douche? Jebus. What out of touch producer set that up? Didn't he go off the air a few years ago or is he still doing his webcast from his basement? His feet should be cemented in a deep dish pizza and they can both be dumped in the river, where they belong.

I have to say this show is the one thing I religiously turn the television on for and I was so psyched to see him coming to my hometown but I don't know... I think this might have been the worst episode I've ever seen. It just seemed like endless footage of Tony driving around, the same stock shots of that stupid bean and just really dull guides who reflect nothing about the Chicago attitude or experience.. Chicago is a loud, fun and lively town - the sort of have fun family style life I would have thought Tony would love. This episode seemed to drain all of that out and make it seem cold and sterile. I'm glad to see Uno's wasn't involved (ew!) but there are dozens of amazing deep dish places well worth praising. While Tony normally seems like the kind of guy who can appreciate all great local dishes, he just seemed totally biased to NYC pizza and actually kinda upset me with his closed minded approach - something I have never seen before in him. I did appreciate the restaurants he did choose to visit but again, why such low energy? I don't know. The whole show was just a huge let down.

But if you had to do a scene with a radio personality, you should've flown in Ron Bennington from Ron & Fez from NYC and had his very own cupcake at Molly's Cupcakes.
So, yesterday my girlfriend and I watched a block of your shows as we hibernated from the Minnesota weather. She’s been a long time fan of you and your program and this was the first time I have seen your show. Absolutely one of the best shows on television, I can’t say a watch a whole lot of TV, let alone the Travel Channel, but I’m hooked. We just got back from Chicago earlier this week and a friend of ours took us out to Burt’s and I couldn’t agree with you more on how delicious that “pizza” is. It’s cool you’re a down to Earth guy who can be comfortable cooking for your crew and having a beer. Gary Gatchel in comment 17, kind of funny that a show that airs regularly at ten Eastern isn’t appropriate for kids. Who’d a thought of that? Also the Bible tells you to do a lot of things, like kill everyone who has cursed his father or mother, everyone who has committed adultery, every homosexual, sell your daughter as a slave, and permit no woman to teach or to have authority over a man. I could go on for hours; the Bible is nonsense in a thousand different ways. A book that advocates senseless murder, slavery and the oppression of women has no place in our society today.
Anthony.. you are such a cutie!! I love your sense of humor!!! You would never think that a show about "food" would evoke such commentary. I just want you to know how much I enjoy your show and how you give me a good laugh every time. We could definitely hang. Take care, and enjoy what you do!

Just a few thoughts on the show! I think your producers took the easy route on this one! The pizza joint is in Morton Grove a town about 10 miles west of Chicago. It has its own mayor and police dept. I wish you could have shared the wealth a bit and featured another palace in the city. They already had Savor plug them. It just seemed like an easy no effort producer pick. Its in Savor! Lets go there! Oh got the tamale place! WTF! You should have the producers eat crap for that one! Wait a minute the crap would have tasted better! Hot Doug's great spot! Been there! Fish place I'm going there! As for the meat in the tube fetish a trip to the Crawford Sausage Co. would have been heaven for you! I know people that come from out of state and bring home cases of the stuff! The Silver Palm is a great bar with the 3 little pigs! I'm well known at the bar next door called The Matchbox.(same owner)I was there when the train car was installed. All in all a good show. Your producers have done better! Mancow is a clown! As I'm sure you found out! He got shit canned and is now on AM radio at WLS. I wished your producer would have hunted down Buddy Guy for a Blues Lesson and Jam Session! It just seemed that your producers didn't put much effort into the show. Thanks you for the show! I very much enjoyed the show. My best friend is in Chicago and I am planning to visit her soon. One thing I tho found it interesting (and pretty disgusting). I believe the food at L20's was awesome and all that but hey LOOK at Laurent's nasty nails. I wonder if he worked in a shop as a mechanic during the day and come to work at the restaurant in the evening!!! Did anyone notice that? And pretty much all the food he touched with his hands would be served raw. Great show, nasty nails..enough said.
Tony...you blew it!! As a long time fan of yours and a life long Chicagoan I have waited patiently for you to visit our fair city. What a thrill it was to learn you were finally going to air an episode about Chicago. Wow what a disappointment the show turned out to be. You totally missed the essence and history of this city.
You are one of the great storytellers of our popular culture. However your staff and research team did you no favor in developing this episode. What you and your team missed is that Chicago grew up and continues to be a city of ethnic neighborhoods. We have the largest Polish population outside of Poland, we boast large and vibrant Italian, Mexican, Indian, Irish, Jewish, Middle Eastern, Chinese, Puerto Rican, Korean, Eastern European, Vietnamese, German, Greek, Japanese, Pakistani communities. Chicago is a true melting pot of all ethnic cultures and each culture is wrapped around it’s unique cuisine.
Your show was disjointed and lacked a central theme…which is such a failure to anyone who truly has studied and understands Chicago. Your choice to air a segment with Mancow demonstrates how out of touch you were current Chicago. He is irrelevant in this city…his 15 minutes expired long ago.
I have no quarrel with your choices of establishments but the way they were portrayed lacked depth and understanding of their history. For example Hot Doug’s is a favorite of mine I am there at least once a month. Instead of wasting time on the insignificant foie gras controversy, you should have given the history of the Chicago style hotdog how two immigrant butchers introduced their hotdog at the 1893 Columbian Exposition their small stand evolved into Vienna Beef a Chicago landmark. And how Doug a young entrepreneur has used his skill and training as a chef to take the Chicago style hotdog to a new level but remaining true to it’s origins.
I truly hope you come back to Chicago and do our city the justice it deserves.
I cannot believe mancow made an appearance. He has nothing to do with Chicago. He hasn't been on the air here for years. I'd rather have watched Tony eating Lou Malnati's with Jim Belushi.
I want to echo 16 Jeff regarding the tired comparisons between Chicago and NYC pizza. It's apples and oranges. It's as silly as comparing pizza in America with pizza in Italy. But most importantly, probably only 10% of all of the pizza consumed in Chicago is deep dish. It's unfortunate that Chef B was tired of beef sandwiches, as one of our true gems was missing from the stage. He should have stuffed one in his face, followed it with a combo and finished with a Maxwell Street Polish. Anyway, thanks for your appreciation and the sincere attempt at showing the world our city.
Thank you, thank you for skipping deep dish. You nailed what is wrong with it. I loved the show; it's tough to condense even a small town into an hour, but you did pretty well by us.
I have to say, though, that I went to Avec Sunday night and except for the bacon wrapped dates, was distinctly underwhelmed. It was OK, but far less than I was expecting.
If I could suggest one thing to try when you come back, try the translated Thai menu at Spoon or TAC Quick...real Thai cuisine, with lots of funky sausage and stuff.
The one thing that surprised me the most is how unaware i was as a former northsider in Chicago (now transplated to Raleigh)how may different local foods and places there are on the southside that those folks take for granted just like i do my pizza, italian beef and Hot Doug's incredable dog and fries on the North side. It's only possible to scratch the surface of the incrdible array of original foods in a show like that but i learned there are two Chicago's when it comes to food. So anthony when you go back let me know and a knowledgable Northsider will take you on a culinary extravaganza.

Yeah, Duck Fat in the REAL Portland is a place to go. Lived in Portland for three years, and did I ever find some good food. Blueberry muffins at Big Sky Bakery, barbecue at Norm's, and I still miss the Saigon Thinh Thanh. I have never found a Vietnamese restaurant that measured up to it. And Gritty MacDuff's may have erratic food quality, but having the brewery right on the premises is pretty sweet. Fuji in the Old Port- I stopped in last summer, hadn't been in since January, and they asked if I wanted my usual.
My two cents on deep dish- when done well, it is freakin' amazing. When not.... um, yeah. Run. Best pizza I ever had was at a little hole-in-the-wall in Yarmouth, Nova Scotia. It was a deep dish, and everything was balanced so perfectly that I suddenly realised what the fuss was about. Most deep dish doesn't even come close; that one was food porn.
As a Chicago native & an avid viewer, I was left disappointed by the Chicago episode. Although I also don't problem w/ the choices, but I agree that the staff/researchers/tourguide did a terrible job with this episode overall, especially in a city that has so much to offer. . .Seriously, no street food? The stands at the Maxwell Sunday Market are amazing; plus the history of Maxwell Street itself is very interesting and rich with Chicago history. That chic Louisa needs to get over herself.
Hey, what happened to my post after the show? Anyway, Tony, you and your show are great, but I have to agree with so many others here. This show seemed lackluster and blazae. What was wrong? Where was your enthusiasm? Your passion? Your edginess? You seemed disconnected with this episode. Like you had a layover at O'Hare and grabbed a camera and said, what the hell, let's do Chicago. You missed the history and soul of the City and having Mancow on was a HUGE mistake. He is a has been hack. He's not even on in Chicago anymore and no one cares. Please come back and redo us.

I will watch this show too. Tony, I do have to tell you though. The last show, the one where you wore the grey and white striped shirt. That shirt looks like a prison uniform and you know how they say Jessica Simpson should not wear high top jeans because they make her look fat. Well you should not wear striped shirts that go around your body because it does make you look fat too. I don't think you are but it has that look. Picture on my blog.
So, how many years must you live in Chicago before you can be "from Chicago"? People saying "Mancow is from Missouri" are making a pretty lame excuse - the guy has lived here for well over a decade - it's not like he just moved here like some of the trendy people on Check Please! acting like they own the city. He may not be native, but neither are a lot of people.
Harry Caray wasn't from Chicago - he was from....MISSOURI - was he not a "Chicagoan"? And before you get your panties in a bunch, I am not putting Muller and Caray on the same level, but I AM making a valid point. Are all the illegal Mexican's, Pole's and Irish who have been busting their ass in Chicago without papers for 10, 15, 20 years or more not considered part of the feel of this city?
From what I understand, Bourdain and Muller have been friends for a while, so I assume Anthony invited Mancow on personally?
Also, Mancow is broadcast in the city again, on WLS along with the other "right wingers" that you guys will be so quick to point out next...
I find Mancow to be a pretty decent entertainer, and that is how I see him. I don't agree with everything he does, but why should anyone agree with everything? I don't know him personally, so I can only judge him from some of the entertainment he hs brought to me. Is he a douchebag in real life? Quite possibly, but I won't bitch about him being on the show. How many people on the radio aren't douchebags? Not many.
Who should have been at Silver Palm with Anthony? Walter Jacobson? Amy Jacobson?

I live in the Belden Stratford, and I missed your visit! I'm only 20, but you are one of the few to whom I look up! I cannot afford Moto, but I did visit Otom for my birthday on the 20th. Aside from the plastic chairs that felt like training pottys, it was delicious. Uno's pizza joint downtown is crammed with frequent Arby's patrons Reeboks, and Ranch dressing. Deep dish is garbage. Rachel Ray has already plowed through Chicago Pizza and Oven Grinders, so beware.
Definitely feature the Matchbox next time you come!

NOOOO!!!!! How could you tell the world about Burt's?!? The guy isn't listed in the phone book for a reason! I wish you would have at least mentioned on the show that you need to call ahead to order, because walk-ins are strictly frowned upon. Poor Sharon is going to be overwhelmed with all the walk-ins. Although at the end of the day, I can't blame you. It is hands down the best pie in the metropolitan area. When my wife and I saw the preview last week, we said "Oh he's probably going to Uno, Gino's or Lou's... I doubt he'd be able to find Burt's" and sure enough, you found Burt's.
And shame on all these people who are disappointed at all the stuff you didn't cover. The show is only an hour long folks. Yeah, I would have loved to see some Italian Beef, and maybe a trip down Devon Avenue on a Friday night... but I can understand.

Watching the last couple of shows, it Seems you're getting a bit soft. I don't know, maybe I hadn't drunk enough, but something has been missing.
Your show typically sets the bar really high... Fantastic, unpredictable, once in a lifetime journeys, with exceptional guests and of course your (ok I'll say it) 'snarky' narration. Taking the good with the bad and loving it all. But TnT's in a sailor bar? Hangin' with Moocow, or whatever that jackaxx's name is? It's not cuttin' it Tony. OK you're a die-hard carnivore, me too. But I hope there's more to Chicago than hot dogs, foot tall sloppy sandwiches and likable anti-pizza, and I expect you to find it and shove it down my couch-potato gullet. in short, the last 2 shows were just good, not great.
I'm a Chicago-to-NYC transplant and I couldn't agree more - the Chicago hot dog is to die for (New York's isn't even CLOSE) but Chicago Pizza SUCKS. Thanks for telling it like it is!

Ahhh... Chicago! I had foie gras for the first time at Tramonto's (I'm poor, but saved up for a fine meal at Ric's restaurant and made sure I finally had that lovely delicacy) and to be the contrarian, love Pizza Uno's deep dish! To me, deep dish is less about pizza and more about a grilled, open-faced sandwich of tomatoes, cheese, and sausage. But, again, that's a personal thing.
I loved the show, Tony, and am looking forward to the next!

Mixed feelings about the Chicago show. I thought the look of the show was great and basically liked your restaurant selections, but Mancow -- what a waste of time. I thought perhaps Laurent Gras' nails were stained by squid ink, but if not, not a very good endorsement for his establishment. I hope you come back to Chicago and hit some of its ethnic neighborhoods and get a little more of Chicago's soul and history. There are places that need more than an hour. I'd like to take you to the old stock yard gates and to Schaller's in Bridgeport of a real touch of Chicago history. Thanks for coming and hope to see you soon. Maybe bring the family and take Ariane to Lincoln Park Zoo.

You just skimmed the surface of all the great places in Chicago to enjoy food. I lived there for eight years and though we didn't frequent the high-end restaurants often (maybe once monthly) there are so many amazing places to eat and enjoy - part of the experience is the time you spend around the table drinking, eating, and talking. When we visit Chicago monthly we look up a new restaurant or old dive and go.
Chicago has it all over NYC when it comes to the experience.
OMG the three little pig sandwich on no reservations is amazing! I had one last night and it blew my mind. My only question is who is the bartender that invented it and why didn't he/she get the credit deserved??? True genius is rarely so overlooked.
As I said earlier, I didn't get to see this because of some game or other causing people to hog the only tv in the dorm that gets Travel Channel, but I'm willing to bet the section with Mr. Dirty Nails was not filmed at the beginning of the day. Anybody who uses their hands to cook is going to get them dirty, and they will get stuff under and on the nails. If you have ever prepared a chicken carcass for stew, then you know exactly what I mean. Expecting a working cook/chef to have pretty hands longer than ten seconds into a shift is fooling themselves.
why must everyone associate chicago with deep dish pizza. chicagoans don't eat that crap. you shoulda found yourself a cracker thin crusted pizza cut in squares. THAT is chicago pizza. is louisa chu FROM chicago?!
I've got to agree with some of the previous comments... I keep getting the impression that you've lost your edge. The places you visit no longer seem to provoke the hostility towards [exception: the chiago pizza] or your curiosity. It seems that the places are old hat.
Places I would like to see shown:
1. Amsterdam, NL ... I found it hard to find where the locals eat, and there have got to be some top places amongst the chains.
2. Brugge, Belgium- why haven't you been here yet?!! French influence, without the arrogance.
3. Heidelberg, Germany- there are some tasty places here, and a strong local market
4. Switzerland- Never been but would be interesting
5. North Carolina... (many reasons besides it being my homestate):
1. Hog Day Hillsborough, NC
2. [As you probably know quite well] we grow truffles
3. Large amounts of agricultural related business
4. We contribute to fishing for American Lobsters

I loved the show- it brought me home, as I'm displaced in Portland, OR (not a bad food "town" to be in, but a far cry from my beloved Empty Bottle and the delicious haunts in Chicago). I would have cheered you on if you had even passed BY the Green Mill. My first Martini at 21. Gah.
I'll have to try Burts when I'm in town later this year- I've never been a fan of the "deep dish" something they serve- having been born in NY and ingrained in the REAL McCoy of what we call Pizza. And way to go on Blackbird, I loved your comment that it was your only ever comp'd meal. How hysterical. Paul Kahan is truly blessed with those he surrounds himself with. It's been one of my favorite places to return to when I visit.

How's things? Its late and I'm still working. I've got to finish a painting by Monday and it's been 3 years since I lifted a paintbrush. It's going ok, apparently I've still got 'it', whatever 'it' is. It's a self-portrait, and I think it's been 4 years since I did one of those. Every other one I've ever done (forced) just looked worried. Surprising really since I only ever worry when I'm awake. I chose to do this one cos I'm interested in what emerges. Took the photos today and let's just say I wish I looked as
comfortable as you in front of a camera. Oh well, guess every one has their talents. Anyway it's a warm summer evening haunted by moths, I'm listening to the tea party (those guys rock) and totally smashed on a single glass of
eggnog. Mom put some in the freezer since I wasn't there for Christmas. It's nothing to do with me, it's the egg nog, it's particularly potent. I think it has something to do with the three types of spirits.

Nice to see Chicago getting some recognition as a great food City. NYC is great but the Windy City has great eats. I had my first taste of mussels at the now closed Gordon a long,long time ago and I have not been the same since. I look at food in a totally different light. I will remember that dinner and the fine couple who took me there always. You picked some great highlights for Chicago...could always go back for another visit.
I'm pleased to see that CHICAGO and Illinois still holds a place in the heart of someone important. I can't say the same for CAPITOL CITY ILLINOIS (Springfield)... it never get an honorable mention except by the number one guy in America... the PRES. I lived for over 12 years in Chicago (moved to Boston last year), I can believe I never went to Hot Doug's. The sad part is that Boston (or East Coast in general) is the not a good part of this country for someone who considers himself a foodie.
BTW, Anthony, the edgier you are getting, the more I am liking your shows. I am also liking the mix of food shrines you are visiting - from low-end to high-end stuff.

Anyone who thinks Boston is a bad place to be a foodie obviously hasn't bothered going outside his own little circle. There's Chinatown, the Japanese section of the Porter Exchange, John Harvard's (if it still exists), the North End for Italian, the farmers' market in Haymarket... and that's what I remember off the top of my head after having moved away six years ago. The East Coast is a very good place to be a foodie, unless you expect all the food to be presented to you on a silver platter.

I am 51 yrs old...lived here all my life..you went places i never heard of.I live on the northside...so many places to go...you missed the Italian beef sandwiches,lou malnati's,if you wanted to do something different...you should of eated on top the Castaways on north ave beach!! Bad show...was so disapointed...and mancow...you got all bad info on what to do here.

TONY! of all the things you did in Chicago, i think the funniest thing you did was pair your dining fare with a Pabst Blue Ribbon beer at the Silver Palm. I am from the area where the brewery is located, and to be honest that is the first time i have EVER seen it in a bottle! Normally it is found aluminum and brown paper bag clad in the hands of poor high school and college students. ha. love it! i will forever think fondly of PBR as i watch your show from now on!
Ever since watching this episode, I've been dreaming of the Three Little Pigs sandwich. I saw comments here from folks who say they've ordered it at the restaurant since then, but I found a curious note from someone on another site who had made a special trip to Chicago to try the sandwich, and upon their arrival was told that the sandwich was "not on the menu". They speculated that the bar-tender/creator was threatening a lawsuit. Before this rumor-mill gets out of control, what is the truth? Can someone in the area confirm that the sandwich is or is not still on the menu?
Sue - The Three Little Piggy Sandwich is on the menu at the Silver Palm. It is white-wine-braised double-smoked bone-in ham with panko-fried pork loin and bacon - plus aged cheddar, fried egg and onion ring - served with lard-fried fries.

Glad you visited our great city of Chicago. I know that there isn't a lot of time to check out all of the great places that we have here, however Eli's Cheesecake Factory on the cusp of Montrose Avenue in Chicago and Harwood Heights, just across the street is worth a try. It is an outlet, but one worthy of checking-out after a meal. Great desserts of all sorts to be had!
Sorry. Another place that would've been interesting to visit would've been to Opart Thai Restaurant in Lincoln Square on the Northwest Side. Great food and if they knew that a camera crew were accompanying your show, I would be sure that their service would be pristine (which, although they have wonderful food, can be quite lax and very aloof). However, there's a really good meal to be had.

Just an fyi -- Grant Achatz's name is pronounced to rhyme with "jackets." Maybe you could correct that on the voice-over; it's a little bit jarring to hear one culinary expert mispronounce the name of another.

You did something right by not stopping at Ginos East or Lou Malnatis...if people are telling you to go there then they arent from Chicago. I have lived in Chicago my whole life and watching your show was the first time I heard of many of those places. They all however look amazing and I will be checking them out as soon as possible. The only problem with the show was that you didn't address the second best Chicago food, losing only to our hot dog, the beef sandwich! Jonnnies Beef at 7500 W North Ave, Elmwood Park, IL is a place very similar to Hot Dougs but is known for having the best beef in the city! Many people will drive over an hour to eat at Johnnies and there is always a line of locals going out the door and around the building. Even if you never do another show on Chicago please take the time to go have a beef at Johnnies if you are ever in town. If I was told I was to die at the end of the day, I would spend up to half of that day going to Johnnies. Its that good.
I know you were recently in Buffalo and as far as I am concerned you did not see a **** thing that this city has to offer. I also realize you probably think there is not anything good about this city. I have traveled all over the world and I can tell you that the people of this city are the nicest, fun and poor than anywhere else in the U.S. The restaurant industry runs this town and you should have hooked up with one of us for some real experiences. Well what are you gonna do, Buffalo will have a bad rap for ever but it still rocks. You have a very entertaining show. Thanks

Only two metropolitan cities...New York and Chicago? What ever happened to San Francisco? SF is truly a great city and is on par with either Chicago or NY in its offerings. I think you need to come to SF and re-evaluate!

I suggest you reconsider grouping these creations along with the obviously inferior East Coast mongrels you call "beef sandwiches".

Hey Tony, want to say my husband and I LOVE your show! We were proud that you FINALLY went to Chicago, we are from Chicago but now reside in TX, and when people ask me what I miss most I say THE FOOD! Chicago is such a diverse city, our food options are far and in between. I saw the show and enjoyed it, but I was sad you couldn't fit some Chi-town favorites in there, the Italian Beef, Italian Beef with sausage dipped, Gyros of all kinds, gyro burger, platters, burritos you name it. You hit on the hot dogs and yes I'm familiar with Hot Dougs and really like their hot dogs but there are sooo many others that are just as good in their own way. I wish you could have hit up 'Jew Town' got got a jew town polish, or pork chop sandwich, some of the old diners by the old cook county hospital. In truth the best food places in Chicago are the hole in the walls, they may not be too pretty but their food is always GREAT, laid back and not trying to impress but fill a stomach with something good for your regular every day folks. Nothing against fine dining, I've done my share since I was a kid, but I'd choose a hole in the wall anyday. Hope you can come back again and do a more in depth show! Tony, you cannot equate the original Uno's and Due's with the franchised restaurants that share the same name. I actually like Gino's East for deep dish a little better, but will admit that it's something you have to be in the mood for. Deep dish is not something I choose often because it's so heavy with mozzarella. There is only a few places in the city to get deep dish or pie style pizza. Chicago pizza, as previously stated, generally is cracker thin crust cut into squares and to me is better than New York style, thus making it the best in the world.
Your guides did you a disservice with the places you were taken to for Hot Dogs, though Fat Johnnies is supposed to be really good, it's just way south and not too well known outside it's neighborhood. I think Hot Dougs was a tremendous choice, but as stated by a number of previous entries you missed out on the neighborhoods and spent too much time either downtown or in wacked out areas like Morton Grove or Calumet City. I would have taken you to some good regular hot dog places like SUPERDAWG (don't know how you missed this), Wiener's Circle, Gene & Jude's (with a stop for a Mai Thai at Hala KaHiki Lounge), and Byron's. I would have liked to see you drop in to the Matchbox for one of their fantastic cocktails or the Green Mill to close out the evening. I would have liked to see you try some Mexican places for late night tacos (La Pasadita perhaps?), Opart Thai in Lincoln Square was a great suggestion made earlier, maybe some German at Mirabell, maybe some Indian at Devon and California, hit Bucktown for whatever you could possibly want (great sushi places), Ricobene's in Bridgeport for a breaded steak sandwich or Taylor Street for Italian. And in addition to what somebody said previously, regardless of how many beef sandwiches you have had, you have to try Johnnies Beef on North Ave.
I guess the point is that those that took you around did not seem to be from here or at least not familiar with the real ethnicity of the major culinary neighborhoods. Chicago is a big city, not New York obviously, but I think what people would have liked to see is you getting dirty at the neighborhood places that really offer better food at better prices. Finally, please don't come to Chicago in the winter. The best time to come to the city is anytime but winter. Come in the summer and we'll take you to baseball games and the Taste of Chicago followed up by Blues clubs and close out with the Green Mill! Keep the faith.

My philosophy on food in foreign places is similar to yours...ask around and insist on eating with the locals in place of god forsaken tourist draws where the clientele cannot accept anything that's not familiar.
One thing I was disappointed not to see on your Chicago episode was footage from The Green Mill and Uptown in general which is a solid part of Chicago's history. But kudos on the episode as a whole. All of the other shows are the same sending the viewers to the same ol' tourist draws and overrated joints that don't show the true Chicago.
One thing I am surprised about is that the show skipped over Thailand & Cambodia even though you were in the area!
While Thailand was beautiful, Cambodia will forever be instilled into my memory having the friendliest people I have ever met and great food which is kind of a hybrid between Thai and Vietnam. I hope that the show can make it to Cambodia someday!
Oh and people, have some good pork potlucks and BBQs this weekend! Swine flu has everyone running around like crazed zombie chickens with no heads. Buy pork! Prices are down! :)

Side note: new crew? I miss the camera and edit work I've seen in the past, Venice had it.. but not so much anymore. Between the time you spend on turning a phrase, the cameramen (woman) getting "that" shot and the video editor creating new looks all the time... No show has that talent. Thanks, I look forward...

Aw, Tony, don't worry about the emails you get from griping viewers. Reading their comments on Facebook, and I'm convinced that they're a) not familiar with your show and think it should be more like a Rachel Ray travel show; or b) a bunch of jealous complainers who think they can do your show better than you. These people haven't clued into how personal these trips are for you, and how the show is about your point of view of a place. That's why we could never have "No Reservations, with Bobby Flay".

I like and support Ric Tramonto (another hero of the Foie Gras battles) and enjoy his restaurants but he's not on the show either. Missed the famous "Italian Beef" but we've been on something of a beef sandwich jag lately--in Baltimore and Buffalo and that might have been a beef too far.

As much as I like the Rainbow Club, Pippin's, Matchbox, Green Mill, I don't know how interesting it would be watching me just drinking (again) on television. The cost of allowing any recognizable music on the show precludes most live preformances or even ambient jukeboxes. I have to agree with that.. keep this up.
.. Can not wait to see the show tonight! Deep Dish Pizza blow but there are not many places with incredible thin-crust pizza in Chicago. Also, a unique place with the only "pizza", among other things, in Lincoln Park that I feel I have not seen. Chicago Pizza and Oven Grinder...

Let me just say I am a fan. I first heard about your show while I was studying abroad in Beijing and got an email from my old man telling me that I had to go to Li Qun roast duck house right away and report back. My philosophy on food in foreign places is similar to yours...ask around and insist on eating with the locals in place of god forsaken tourist draws where the clientele cannot accept anything that's not familiar.

Do SOMETHING. You didn't go to a ballgame or one of our famous street fairs. Unlike New Yorkers, Chicagoans actually stick around and enjoy summer weekend in the city.

Our deep dish does blow -- almost as much as your Chicago show blew. Come back, get an Italian Beef, eat some good crispy thin crust, hang out with Steve Dahl if you want a radio host (talk about disco demolition), or one of the thousands of smart actors, authors, journalists and others we offer, and please don't ever compare our beef sandwhich to Baltimore's. That's ust sad for both of us.

I have to admit that growing up in Chicago I am horribly biased and don't actually consider that thin stuff from New York the same food. However the best pizza is actually a Chicago-style place in Oakland/Berkeley, California called Zachary's. It combines the idea and form of Chicago with the most amazingly fresh produce from California.
I think the secret for the best pizza is mozzarella of good quality (mozzarella. Not other cheese called mozzarella. You cannot fool people on that :-). Then use olive oil, and bake the pizza in a wood stove.
On yes, an no pineapples on pizza. Someone should ban this ingredient! :-).

Man I'm so sick of New Yorkers disliking Chicago pizza for no other reason than it's not New York pizza. I think it's very revealing that Chicagoans love NY pizza but New Yorkers hate ours. Maybe it's because most of the country's only exposure to our pizza is in some second rate Pizzeria Uno chain (and yes Pizzeria Uno does suck in all of its forms). But the competition is just stupid. Let's love the pizza in all of its beautiful incarnations. Can't we all just get along?

Ahhh... Chicago! I had foie gras for the first time at Tramonto's (I'm poor, but saved up for a fine meal at Ric's restaurant and made sure I finally had that lovely delicacy) and to be the contrarian, love Pizza Uno's deep dish! To me, deep dish is less about pizza and more about a grilled, open-faced sandwich of tomatoes, cheese, and sausage. But, again, that's a personal thing.

My philosophy on food in foreign places is similar to yours...ask around and insist on eating with the locals in place of god forsaken tourist draws where the clientele cannot accept anything that's not familiar.
